What affects the Glycemic Index?

Well, yes. We all know that processing can affect the glycemic index of a food. Well - err  - sometimes. It is not all black and white. A number of things affect how fast a food changes into glucose and processing in only one of them. For example, adding acid to the meal - like vinegar - can lower the glycemic index of the meal.
